Why so many churches? Well, there were a lot of indigenous folk to convert, educate and control. The various orders of the Catholic church would get the nod from the king to move in and establish parishes (communities). The century or so that it takes to build one of these churches also buils an economy and a social order.
Sometimes an order of the church would get too powerful and rub the king the wrong way. He'd kick them out and another order would come in, build a new church etc.
This is the Plaza de San Francisco, one of the earliest orders to set up camp here in Quito. There are now shops in the catacombs underneath and I understand you can poke way in there. I will go back and do that.
